Regarding template customization, is there any way that I can be more specific with the post types that YP is effective on?
For example - If I have some posts that are "blog" posts and some that are "interview" posts. Could I apply settings on only one type and not the other? Both are still "Posts" as opposed to "Pages" but they are different content/layout wise.

Yes. Instead of using single or global customization you can use template customization.

Well, no. You can use either single or template. You can't choose template and when choose to not style couple posts.
